Spain can be very proud once again, as the number of MICHELIN Stars continues to rise, with a total of 272 awarded restaurants and 34 new additions within these distinctions, making the country gastronomically shine brighter than ever.
 
If we briefly analyze by regions, Catalonia leads with a total of 54 MICHELIN-starred restaurants, maintaining its status as a clear gastronomic benchmark nationwide. Madrid also stands out with 6 new additions, solidifying the capital as a constant hub of culinary excitement. Amid the widespread emergence of stars across the country, another region gaining prominence is Andalusia, adding 5 new restaurants to the list. Here are some highlights from 2023 that have caught critics' attention:

- Suto in Barcelona: More than a restaurant, it resembles a private home where the chef cooks for you. Japanese-inspired restaurant featuring a bar, where you can dine while watching the young chef Yoshikazu Suto working live.
- Desde 1911 in Madrid: This establishment is a true ode to fresh product, due to the family legacy side business, Pescaderías Coruñesas (renown fishing distributor). A spacious venue located in a former industrial warehouse, offers various spaces for events and an interior courtyard ideal for enjoying a drink after dinner.
- BACK in Marbella: Looking for haute cuisine with a touch of fun? Back resembles a modern that can achieve both requirements in a perfectly balanced manner. The menu is divided into two sections, "What stays...", and "What changes..." is complemented by a delightful tasting menu called "Entorno" that will leave no one indifferent!
- Radis in Jaén: Led by a young chef, eager to revolutionize the culinary scene of the city, recently crowned "Chef of Oil" after winning San Sebastián Gastronomika competition. What stands out the most? Their menu is a surprise, and you don't know what it is until you sit at the table!
